Banana Pecan Caramel Layer Cake! 🍌🍰
Ingredients:
2 ½ cups all-purpose flour
1 ½ tsp baking soda
½ tsp salt
1 cup unsalted butter, softened
1 ½ cups sugar
2 eggs
1 ½ cups mashed ripe bananas
½ cup sour cream
1 tsp vanilla extract
1 cup chopped pecans
1 cup caramel sauce (plus extra for topping)
Instructions:
Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
In a bowl, whisk flour, baking soda, and salt.
In a separate bowl, beat butter and sugar until fluffy. Add eggs one at a time, then mix in mashed bananas, sour cream, and vanilla.
Gradually add the dry ingredients, then fold in chopped pecans.
Divide the batter between the pans and bake for 25-30 minutes. Let cakes cool completely.
Spread caramel sauce between the cake layers and over the top.
Garnish with extra pecans and caramel drizzle.
Notes:
Add whipped cream or cream cheese frosting for extra richness.
For a crunchier texture, toast the pecans before mixing in.
